Lange Zeit wurden ihre Vorteile untersch\u00e4tzt, heute w\u00e4chst ihr Anwendungsbereich st\u00e4ndig.\u00a0<\/p>\n\n\n\n<p>&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Klassifizierung von Ballaststoffen<\/strong><\/h3>\n\n\n\n<p>Allgemein bezeichnet der Begriff Ballaststoffe all jene Teile von pflanzlichen Lebensmitteln, die der K\u00f6rper nicht verdaut oder aufnimmt. Im Gegensatz zu anderen N\u00e4hrstoffen greifen Enzyme im Magen und D\u00fcnndarm Ballaststoffe nicht an, sodass sie unverdaut in den Dickdarm gelangen.<\/p>\n\n\n\n<p>In Anwendungen haben Ballaststoffe eine Reihe unterschiedlicher Eigenschaften, wie etwa Viskosit\u00e4tsregulation (Verdickungsmittel), Fettbindeverm\u00f6gen, Gelbildungsverm\u00f6gen, Texturierf\u00e4higkeit. Die wichtigste Eigenschaft eines Ballaststoffs ist seine F\u00e4higkeit, Wasser zu binden: die Wasserr\u00fcckhaltef\u00e4higkeit (WHC).
